I'm a little skeptical that alcohol was introduced into Chinese culture just 10,000 years ago. You can tap palm trees in Asia and drink the naturally fermented juice. These people were clever, and probably had a familiarity with fermentation before they cultivated grain. My guess is that mankind drank fermented beverages far sooner than 8000 BC. Did you know that the nomads in northern China drank fermented mare's milk?
